In the Cellar
Our philosophy in the wine cellars focuses on precision and adaptation to each batch of grapes.
As an extension of the precise work carried out in the vineyard, both vinification and aging are carefully considered for each vessel, whether it be vat, demi-muid, barrel, amphora, or large wooden cask.



















Technology Serving Precision
Château Fleur Cardinale wines flourish in their dedicated cellar, completely redesigned in 2019.
A second cellar, renovated in 2024, hosts the crafting of Château Croix Cardinale and Fleur Cardinale blanc wines.
These two spaces combine innovation and technical excellence. At the heart of each cellar, double-walled stainless steel vats, temperature-controlled throughout their height, provide remarkable thermal inertia comparable to concrete vats, while ensuring perfect hygiene. State-of-the-art temperature control systems ensure precise monitoring of fermentations, guiding each wine toward its optimal expression.

Plots Revealing Character
From our red and white vineyards alike, each plot is vinified separately, preserving the distinct character born from the diversity of our terroirs. Every batch receives its own tailored approach, from yeast selection to fermentation temperatures, honoring its unique qualities. This meticulous attention provides us with a rich palette of terroir expressions for our final blends.

Time Shaping Wines
For both our red and white wines, each batch finds its ideal vessel among a range of aging options: new or once-used barrels, 500 or 600-liter demi-muids, 20 or 30 hL foudres, and 7.5 hL terracotta amphoras.
This diversity allows us to fine-tune the interplay between wine, wood and oxygen for each batch, providing optimal conditions for each to reveal its full potential.
Regular tastings of each batch throughout the year guide our decisions on whether or not to continue maturing. The duration is adapted to the nature of each batch, but also to the profile of the vintage.
